Learnt to cook from a young age with his parents, one of his fondest and earliest food memories is the chocolate cauldron, churros and suckling lamb that they traditionally have in his village at the end of the summer. Simon's Spanish heritage has can be felt all through his cooking. He is a great advocate for unpretentious dishes which are culturally-rich, technically complex and, above all, tasty!
